Pineapple Rum Cider Recipe by Rhubarbarians
- 46 oz pineapple juice
- 2 cinnamon sticks
- 12 whole cloves
- 20 allspice berries
- ½ small orange
- ¼ cup toasted coconut flakes
- 1 cup dark spiced rum
Mix the pineapple juice, cinnamon, cloves, allspice, orange and coconut flakes in a medium pot. Bring to the boil, then reduce heat to low and simmer for 45 minutes. Remove from heat. Let cool completely. Strain well through a fine mesh sieve or cheesecloth. Refrigerate at least 1 hour.
Stir in the rum. Garnish with pineapple slices, orange slices, and cinnamon sticks.

- 2-3 apples, chopped
- 1 orange, sliced
- 1 pear, chopped
- 2 cups spiced rum
- 2 cups apple cider
- 1 cup orange juice
